OpenShot v2.5.1 periodically makes recovery copies of your project and saves them to a special folder in your HOME folder. You can recover most, if not all, of your project by opening one of these recovery files. In Windows operating systems, the recovery folder is C:\Users\(USERNAME)\.openshot_qt\recovery. Open File Explorer and browse to that folder. Double-click the most recent copy of the OSP file with the same name as your project. When the project opens, use the "Save Project As..." function in OpenShot to save the project with the proper name and make a copy of your working project file.
